A method of manufacturing ginseng extract by extracting light irradiated ginseng fruit with any one method of hot water extraction, organic solvent extraction and supercritical extraction is provided to recycle ginseng fruit which is discarded as waste. Ginseng fruit is irradiated with light, heated with steam at 80 to 100deg.C for 1 to 5hr, dried and extracted. The ginseng fruit extract is then mixed with one or more saponin hydrolysates selected from alpha-glucosidase, alpha-rhamnosidase and soyasapogenol B. The light is any one selected from infrared rays, visible rays and ultraviolet rays. The extraction is performed by any one method of hot water extraction, organic solvent extraction and supercritical extraction. |
