PURPOSE: A process for preparing wines having different tastes and compositions according to physical constitution of a consumer is provided, thereby producing different wines suitable for each consumer. CONSTITUTION: The process for preparing wines having different tastes and compositions according to physical constitution of a consumer comprises the steps of: classifying consumer's physical constitution into two major groups; classifying consumer's physical constitution into minor groups; dividing additive material into three groups consisting of a recommending group, an abstaining group and a prohibiting group based on the classified consumer's physical constitution; mixing additive ingredients belonging to the recommending group and prohibiting group; mixing the mixed additive ingredient with wine ingredients; and fermenting the mixture and filtering it.
