A knife cooperates with a body above it, preferaby a ribbed roll, that presses the skin in diverging directions over entire length of knife cutting edge. A fish skinning machine (1) for removing the skins from pieces of fish comprising two fish fillets joined together along the backbone with the heads and optionally the tails removed, includes devices for removing the skin, and a conveyor (2) for transporting the pieces of fish past the skin removing devices. Skin is removed using a knife (13) situated above the conveyor and extending in the conveyor cross-direction. The knife cooperates with the surface of a body located above the knife, which presses the skin in diverging directions against the cutting edge (13) of the knife over its entire length. The diverging directions include a horizontal vector extending at right angles to the transport direction (A). An Independent claim is also included for a fish skinning process using this machine.
