<P>PROBLEM TO BE SOLVED: To efficiently heating and cooking down paste foods without causing scorch. <P>SOLUTION: A heat source energy control method for a heating pot 1 in the cooking-down process of the paste foods is a method for controlling energy of the heart source of the heating pot 1 in the cooking-down process of the paste foods put in the heating pot 1 having an agitator 3. A boundary temperature of the heat source abutting on the heating pot 1, a boundary temperature of the paste foods contacting with the inner wall surface of the heating pot 1, and a temperature of the paste foods in a position separated from the inner wall surface of the heating pot 1 are measured respectively. A temperature rising period, a vaporizing and cooking-down period, a scorch critical period, and a scorch developing period are monitored from the two temperatures and the temperature difference out of the three measured temperatures respectively.
