<P>PROBLEM TO BE SOLVED: To efficiently heating and cooking down paste foods without causing scorch. <P>SOLUTION: A heat source energy control method for a heating pot 1 in the cooking-down process of the paste foods is a method for controlling energy of the heart source of the heating pot 1 in the cooking-down process of the paste foods put in the heating pot 1 having an agitator 3. A boundary temperature of the heat source abutting on the heating pot 1, a boundary temperature of the paste foods contacting with the inner wall surface of the heating pot 1, and a temperature of the paste foods in a position separated from the inner wall surface of the heating pot 1 are measured respectively. A temperature rising period, a vaporizing and cooking-down period, a scorch critical period, and a scorch developing period are monitored from the two temperatures and the temperature difference out of the three measured temperatures respectively. The scorch is prevented by controlling the heat source energy from the monitoring of the scorch critical period. <P>COPYRIGHT: (C)2003,JPO |
