PURPOSE:To obtain a mild say sauce free from soy sauce smell by passing nitrogen gas, etc., through a soy sauce to decrease the content of isobutyl alcohol, n-butyl alcohol and isoamyl alcohol in the say sauce below a prescribed level. CONSTITUTION:The objective soy sauce is prepared by passing nitrogen gas or air through a soy sauce, thereby decreasing the content of isobutyl alcohol, n-butyl alcohol and isoamyl alcohol in the say sauce to <=5ppm each. |
