PROBLEM TO BE SOLVED: To provide a manufacturing method of salad which prevents water separation from salad materials and has concentrated taste.SOLUTION: There is provided a salad by blending at least an O/W type acidic emulsified seasoning, a W/O/W type acidic emulsified seasoning, and salad materials, the W/O/W type acidic emulsified seasoning contains a first oil drop in which an inner water is dispersed, organic acid, egg yolk, saline and a thickener in an outer water phase and the first oil drop contains edible oil and fat and polyglycerol condensed ricinoleic acid ester, the O/W type acidic emulsified seasoning contains a second oil drop in which no inner water phase is dispersed in an outer water phase and the second drop contains edible oil and fat and ratio of the edible oil and fat contained in the first oil drop and the edible oil and fat contained in the second oil drop is 2:1 to 1:10.SELECTED DRAWING: None |
