Fats are separated from waste water in a degreasing bath (2) containing a flotation compartment (3). Water is fed into one side of the bath (5) and overflows from the other side (7), at a lower level, preventing back flow. A reservoir (10) containing a solution of fat digesting bacteria is suspended from an opening (8) in the top of the bath, covered by a lid (9). Pre-determined quantities of bacteria are dosed (2) into the water for treatment.
