摘要 The invention relates to a device that can hold a food product between two plates, such that, when connected to a texture meter, the wettability of said products can be analysed. In order to analyse this parameter, the product is submerged in a liquid and the force acting against the movement of the food product is registered, thereby obtaining information regarding the absorption of the liquid and the retention of same in the food product once removed from the liquid. This measuring system permits both the analysis of the behaviour of different food products when wetted in a particular liquid, and the analysis of the behaviour of different liquids when a food product is submerged therein.
