FIELD: food industry.SUBSTANCE: invention relates to food industry and can be used to establish processing in flour and feed wheat grains affected by smut. During implementation of method used device "electronic nose", for this purpose one prepares detecting device of "electronic nose" type, which matrix is formed from 7 piezo sensors with basic oscillation frequency of 10…15 Mhz, on electrodes of which is applied sensitive coating in amount of 4-10 mqg of solutions sorbents: polydiethylenglycol succinate, polyvinylpyrrolidone, carbon nanotubes, modified by azotic zirconyl, prepared detection device is connected to computer, then taken sample of wheat grain is placed in sealed glass vessel with polymer soft membrane, maintained at a temperature of 20 °C for least of 30 minutes, then through membrane 3 cmof equilibrium gas phase is taken and injected into body of static detection device of "electronic nose" type, signals of array of sensors are recorded in form of chrono periodograms, based on which "Visual fingerprints" are obtained, which are compared with "Visual fingerprints" of standard mixtures with fingerprints available in database, based on fingerprints dimensions conclusion is made on degree of their similarity, area of "Visual imprints" is calculated, and from calibration curve of area of “Visual fingerprints” of bunt fungi spores in samples of wheat grains, their content, which is used on suitability of wheat grains for further usage, if number of detected spores varies from 0 to 0.05 %, then grains can be used for processing into flour, if number of spores exceed 0.05 %, then testifies to lesion of wheat grains and impossibility of its further use.EFFECT: higher accuracy and sensitivity, as well as simple and faster determination.1 cl, 2 dwg, 2 tbl, 2 ex |
