Crunchy, dried pieces of fruit and vegetables are made by comminuting the peeled and cored or stoned fruit or vegetable, impregnating the pieces with a substance which inhibits discolouration in air, and drying the pieces with movinghot air. In one embodiment, pref. the fruit or vegetable pieces are aromatised in an ethanol-contg. aroma bath and then dried in hot moving air. USE/ADVANTAGE - Useful for producing crisp snack-type prods. from fruit and vegetables, having a good flavour, texture and appearance, and having a lower calorie content than known crunchy snack foods such as fried potato crisps (chips). The prods. are free from the soft, elastic or spongy texture of previous dried fruit and vegetable prods. The fruit used is pref. a core fruit, esp. apples. |
