The present invention relates to a method of reducing bitterness and astringency of lysine, comprising a step of adding sodium glutamate to lysine hydrochloride, and to a seasoning composition produced thereby. The composition of the present invention has an effect of alleviating unpleasant bitterness and astringency of lysine as the lysine hydrochloride and the sodium glutamate are mixed in a predetermined ratio. Thus, the present invention has effects of: alleviating bitterness and astringency of lysine, being used conventionally as a food additive; and enhancing the flavor of foods when added to foods. |
