FIELD: food-canning industry. SUBSTANCE: invention relates to technology for production of sterilizable preserves using dried vegetable raw. Before package dried vegetable components are recovered in the presence of the preparation prepared by sequential extraction of biomass of micromycetes Mortierella dichotoma by the known technology. Invention provides reducing effect of substances inhibiting digestion of dried vegetable components, on taste of the end product, reducing consumption of these substances and enhancement of color fastness of the end product. EFFECT: improved production method. |
