PROBLEM TO BE SOLVED: To provide a modified starch that can improve and keep a texture of a wheat flour-processed product without giving an influence to workability in producing a wheat flour-processed product and to a form of the product, and to provide a wheat flour-processed product made from the modified starch, and a method for producing the wheat flour-processed product. SOLUTION: The modified starch has a viscosity of the range from 10 to 200 mPa s at 5 wt.%, and a variation of the hard viscosity measured by the Farinograph of not higher than 30.
