Environment-friendly fermented small black soybean noodles and its manufacturing method are provided to reduce the disgusting smell of the soup prepared with fermented soybeans and to maintain the sweetness. A manufacturing method of fermented small black soybean noodles comprises (the first process) a material preparation step for adding fermented small black soybean powder and cooking oil in a certain amount; (the second process) a material weighting step; (the third process) a mixing step for mixing it with cooking oil gradually and spreading the drinking water; (the fourth process) a step for passing it through a rolled coil in a noodle maker; (the fifth process) a coil cutting step; (the sixth process) a hanger drying step; and (the seventh process) cutting and packing step.
