Process for producing yeast granules having delayed onset of fermentation

A process for producing yeast granules having delayed onset of fermentation, in which dried yeast is treated with a solution of common salt and is then dried. In the process, the dried yeast is coated by a salt crust which prevents a dough mixture to which the yeast has been added from beginning to ferment immediately. A delay of fermentation of approximately 18 hours is achieved by yeast granules produced according to the process having a salt content of 40 % by weight.
