An energy storage- and energy extraction system has an energy store (30) that is partially loaded with energy from the combi-steamer and/or the pizza oven. Energy is partially unloaded from the energy store using a controlling and regulating unit for utilization by the combi-steamer and/or the pizza oven, where the energy transfer is controlled in a convective and/or conductive manner.
