PROBLEM TO BE SOLVED: To provide a method for producing carotenoid-containing dry powder by using protective colloids which do not display disadvantages of the prior art. SOLUTION: This method for producing dry powder containing one or more carotenoids is characterized by comprising (a) dispersing one or more carotenoids in an aqueous molecular or colloidal solution of a mixture of lactose and a protective colloid and (b) converting the resultant dispersion into a dry powder by removing the water and, where appropriate, additionally used solvents from the dispersion and carrying out drying, as necessary in the presence of a coating material, wherein at least one soybean protein is used as protective colloid in the process step (a). |
