PROBLEM TO BE SOLVED: To provide a method of producing baked giaoz, hardly adhering baked deposits after baking giaoz to a hot plate, a seizure preventing liquid for giaoz, and frozen giaoz.SOLUTION: Giaoz is baked on a hot plate in a state of adhering a seizure prevention liquid which contains an aqueous solution where 0.3-1.5 pts.mass of thickening polysaccharide is dissolved based on 100 pts.mass of water, to a baked surface of giaoz. The thickening polysaccharide contains preferably at least one kind selected from guar gum, carrageenan, xanthan gum and agar. The seizure prevention liquid contains preferably fat and an emulsifier in addition to the aqueous solution. It is preferable to adhere the seizure prevention liquid to raw giaoz or steamed giaoz followed by freezing, and bake the giaoz on a hot plate.SELECTED DRAWING: None |
