COMPOSITION DERIVED FROM CHIA SEEDS

[Problem] To separately provide seeds derived from chia seeds and a composition comprising components other than the seeds. [Solution] Seeds, which are obtained by adding 5-50 times as much water to chia seeds, thus swelling chia shell polysaccharides constituting the outer periphery of seeds, and then applying a mechanical force to remove the chia shell polysaccharides; a liquid composition comprising as a main component the chia shell polysaccharides other than the seeds; or a powdery composition prepared by drying the liquid composition. In the composition, the lipid content is preferably 0.1-5%, the protein content is preferably 0.1-10%, and the ash content is preferably 0.1-10%.
