CONSTITUTION:A strain belonging to Bifidobacterium longum and producing a large amount of polysaccharides extracellularly. The production of food products stabilized in their water retention by using the culture mixture produced by culturing this Bifidus strain in a liquid medium. A water retention stabilizer containing the culture mixture produced by culturing the Bifidus strain in a liquid medium. A production process of fermented milk having smooth texture with high texture stability by using the strain as a starter.
