PROBLEM TO BE SOLVED: To provide pasta filler cheese such as mozzarella cheese, having flavor of ripened cheese, even if it is unripened just after production, and having desired stretch properties. SOLUTION: The pasta filler cheese has a prescribed content of tungstic acid soluble nitrogen.
