摘要 PROBLEM TO BE SOLVED: To provide a sterilization method capable of maintaining a preferable flavor unique to burdock, capable of completely removing general germ and heat resistant spore in a production method of burdock extract beverage.SOLUTION: Dried burdock and water are sealed in a double pot pressure cooker. A low temperature low pressure sterilization step of a first stage is performed, a mixture of burdock and water is heated to first predetermined temperature, then, the mixture is continuously heated for a first predetermined time or longer, then heating is stopped. A lid of the cooker is opened, and scum of burdock is removed. Then a high temperature and high pressure sterilization step of a second stage is performed, the burdock extract is heated to second predetermined temperature, then, the burdock extract is heated continuously for a second predetermined time or longer, then heating is stopped. Finally, the burdock extract is cooled to normal temperature, thereby the burdock extract beverage which contains no general germ and heat resistant spore, is obtained. The burdock extract beverage has a preferable flavor unique to burdock, by using a two-stage sterilization method employing different temperature.SELECTED DRAWING: Figure 2
