<P>PROBLEM TO BE SOLVED: To provide edible moisture barrier for food for preventing in multicomponent food moisture transport between food components each having water activity and/or moisture content different from each other at given storage temperature. <P>SOLUTION: The edible moisture barrier for food comprises 1-35wt.% of particulate edible high-melting lipid with a melting point of at least 70°C and a volume mean diameter of below 10 micron, and 65-99wt.% of edible low-melting triglyceride blend. <P>COPYRIGHT: (C)2004,JPO |
