<P>PROBLEM TO BE SOLVED: To establish a method for producing a nonreducing sugar from a partial decomposition product of starch, and to develop applications thereof. <P>SOLUTION: There are provided a new nonreducing sugar-producing enzyme for producing a nonreducing sugar with a trehalose structure from one or more partial decomposition products of a reducing starch selected from those having a glucose polymerization degree of 3 or more, a method for producing the same and a microorganism producing the same. In addition, there are provided a nonreducing sugar with a trehalose structure at a terminal thereof produced by using the new nonreducing sugar-producing enzyme, a low reducing sugar containing the same, trehalose produced therefrom, and a composition in which these nonreducing sugars are contained. <P>COPYRIGHT: (C)2004,JPO&NCIPI |
