PROBLEM TO BE SOLVED: To obtain high-quality coffee beans having excellent preservation stability without impairing the essential flavor of coffee by washing unroasted dried raw coffee beans with water, dehydrating the raw coffee beans by centrifugation and drying the raw coffee beans under a specific condition to treat the coffee beans. SOLUTION: Unroasted dried raw coffee beans are washed with water at <=20 deg.C for 30 minutes with stirring twice or more times. The washed raw coffee beans are immediately dehydrated by centrifugation and the water content of the raw coffee beans is reduced to <=20% calculated as the total water content of water in the interior and surface water. The raw coffee beans are dried under forced blast to treat the coffee beans. Preferably the raw coffee beans after washing have <=10% turbidity (measured based on JIS K0101) and the centrifugation is carried out >=1,000 rpm number of revolutions for >=5 minutes. Preferably the treated raw coffee beans are further roasted.
