Disclosed is a barley syrup production method, which comprises a decomposition step of decomposing a barley or a milled product thereof at a temperature of 20 to 80°C (inclusive) in the presence of a-amylase. The method enables to produce a barley syrup having a sufficiently low viscosity. As an embodiment, also disclosed is a barley syrup production method, which comprises a decomposition step of decomposing a barley or a milled product thereof at a temperature of 45 to 80°C (inclusive) in the presence of a-amylase. The method enables to produce a barley syrup having a sufficiently low viscosity and rich in ß-glucan.
