FIELD: food industry.SUBSTANCE: invention relates to production process for kvass beverage. Method involves preparation of recipe components, extraction of allspice with liquid carbon dioxide to separate corresponding miscella. Then scorzonera is cut, dried in the microwave to a residual moisture content of about 20 % in the power of the microwave field, providing heating to a temperature within the scorzonera slices 80-90 °C for at least of 1 hour, roasting, impregnation separated miscella while increasing the pressure relief to atmospheric pressure while freezing scorzonera. Then, its crushing and mashing together with kvass bread and hot water and three infusions with separation of liquid phase from thick to produce kvass wort, adding 25 % of recipe quantity of sugar in form of white syrup, fermentation with bakery yeast, blending with remaining sugar in form of white syrup and bottling.EFFECT: method reduces duration of process and increases foam stability of end product.1 cl |
