PROBLEM TO BE SOLVED: To obtain a substitute for oils and fats causing little accumulation of fat in the body, having a low viscosity, a high fuming point and good taste, usable similarly to an ordinary edible oil and applicable to various uses. SOLUTION: This substitute is composed of a polyglycerol fatty acid ester having a hydroxyl value (OHV) of <=20 and containing >=20wt.% (preferably >=50wt.%) of a polyglycerol having a polymerization degree of 2-3. Not less than 50mol% (preferably not less than 90mol%) of fatty acids esterified to a glycerol skeleton having a polymerization degree of 2-3 is composed of <=10C (preferably 8C and/or 10C) fatty acids. Preferably examples of the fatty acid are fatty acids of repeseed, soybean, olive, cocount, cotton seed, etc. |
