<P>PROBLEM TO BE SOLVED: To provide a method for producing a fermented malt drink having separately controlled color, harsh taste, smoky taste, burnt odor, etc., by fractionating colored malt to individual tissues and compounding the fractionated tissue fractions singly or in combination of a plurality of the fractions. <P>SOLUTION: A colored malt is fractionated to individual tissues comprising albumen tissue, endodermal layer, husk and plumule or their unseparated fractions, and the tissue fraction is used singly or in combination of a plural kinds of the fractions as a raw material for a malt drink.
