<P>PROBLEM TO BE SOLVED: To obtain an oil-dissolving agent for a water-soluble compound easily soluble in oil and fat while being in a transparent condition without causing cloudiness on the water-soluble compound insoluble into oil; and to obtain oil and fat in which the water-soluble compound becomes uniformly oil-soluble by containing the oil-dissolving agent. <P>SOLUTION: The oil-dissolving agent for the water-soluble compound is obtained by using a polyglyceryl fatty acid ester a main constituent fatty acid of which comprises erucic acid, and adding the polyglyceryl fatty acid ester to oil and fat so as to make the water-soluble compound uniformly soluble in oil. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
