PURPOSE: A method of making a turnip-fermented product by fermenting a dried turnip whose leaves and roots are moved in persimmon vinegar and drying is provided. The fermented turnip powder having excellent effect on alleviating hangover and preventing liver disease is mixed with pollen, ginseng, red ginseng, wormwood, glasswort or the like to give health supplementary food. CONSTITUTION: A turnip(Brassica rapa L.) whose leaves and roots are moved is dried with cold air at 24deg.C or less for about 50hr in the first stage while turning it upside down every 12hr to stably preserve effective components such as isothiocyanate, disulfide, sulforaphane or the like. The dried turnip is fermented in persimmon vinegar in a fermenting tank for about 10 days or in a naturally-fermenting state for about 6 months, dried in the sun for 48hr and then with cold air at 24deg.C or less for about 50hr in the second stage and then ground. The turnip powder is mixed with turnip leaves and unpolished rice paste and then formed into the shape of pills, granules, powders, capsules, tablets and the like. The turnip powder also is mixed with pollen, ginseng, red ginseng, wormwood, glasswort or the like to give health supplementary food. |
