PURPOSE: Elm noodles prepared by roasting and grinding leaves of an elm tree(Ulmus parvifolia Jacq.) and kneading with wheat flour, salt and water are provided. The product has efficacy of the elm tree. CONSTITUTION: Leaves of an elm tree are roasted for 2.5hr and ground. Then, 20% by weight of elm tree leaf power is mixed with 47% by weight of wheat flour, 20% by weight of buckwheat flour, 10% by weight of potato starch, 3% by weight of salt and a suitable amount of water, kneaded and then extruded to give cold noodles.
