Preparation of composite material for freezing, thawing, fermentation and cooking of dough

Preparation of a composite material (I) comprises: (a) using mineral or synthetic fibres; (b) applying a perfluoroalkoxy resin coating to the fibres; and (c) heating the coated fibres to a temperature greater than the melting point of the perfluoroalkoxy resin in order that the resin penetrates the fibres by capillary action. Also claimed are (I) and a holder (II) for the freezing, thawing, fermentation and cooking of dough, consisting of a metal super structure and a net formed from (I).
