PROBLEM TO BE SOLVED: To enable efficient preparation of high quality fried foods such as SATUMAAGE (deep-fried minced fish and vegetables). SOLUTION: This preparation method comprises continuous heating of a frying material W in the first pan 11 and the second pan 12, in which the frying material W is heated with oil of a higher temperature in the second pan 12 than in the first pan 11. Before the frying material W is heated in the second pan 12, a large number of fine holes are formed on the surfaces of the frying material W using a hole-making device 13, and the frying material W is heated in the second pan 12 in a state where a large number of holes are formed on its surfaces. |
