PROBLEM TO BE SOLVED: To inhibit the deterioration of foods by activating the cells with lowered activities in foods and food products, for example, a variety of marine products, livestock products, farm products, and activating the functions of cell membranes and cytoplasm sols included in the deactivated cells with an aqueous solution containing salts and saccharides. SOLUTION: The objective food deterioration inhibitory composition is an aqueous solution including salts and saccharides as solutes in which the total molar concentration of the cations in the salts is 0.15-0.40 mol/l, while the total molar concentration of the saccharides is >=0.10 mol/l and characteristically the grand total of the molar concentration of the solutes is <=0.54 mol/l. |
