PROBLEM TO BE SOLVED: To provide a method for preparing a colored potato dry powder containing a fresh anthocyanin pigment even without blending a coloring material. SOLUTION: This colored potato dry powder is obtained by cut-treating potatoes of common cultured varieties such as Solanum tuberosum ssp. andigena L. and S. phureja Juz. et Buk., containing the anthocyanin pigment in their skin parts and meat parts, different cultured varieties or varieties obtained by hybridizing and rearing for improving practical properties such as pigment concentration, disease resistance, yield based on such above varieties, performing a blanching treatment of the cut and formed colored potatoes under a condition of 60-95 deg.C for 60-180 sec., then dehydrating, drying and crushing to be powdered. |
