FIELD: food-processing industry, in particular, baking industry. ^ SUBSTANCE: method involves producing extract containing ethyl alcohol, methyl alcohol, propyl alcohol, succinic acid, and water; to do that, cooling vapor mixture produced during baking and collecting condensate-extract; separating collected extract by distillation process into components contained therein, followed by utilizing resultant components according to their intended purpose. ^ EFFECT: improved quality of extract and simplified method for producing said extract. ^ 2 cl, 2 ex |
