A method for preparing a pastry confection comprises: (1) preparing a base; (2) filling the base with an intermediate composition made of butter and grains from at least one stone fruit; (3) first cooking; (4) filling the part-baked base; and (5) second cooking. An Independent claim is also included for a pastry confection prepared by the described process, and where: (a) the pastry base is made from flour, butter, caster sugar and salt; (b) the intermediate composition is made of butter and grated uncooked almonds; and (c) the final filling is made from crushed almonds, caster sugar, raw egg whites, flour and a flavoring. |
