摘要 PURPOSE: Provided is a method for effectively manufacturing yogurt which contains microcapsules of lactic acid bacteria, and is removed from unpleasant smells caused by an emulsifying agent. CONSTITUTION: A method for effectively manufacturing yogurt containing microcapsules of lactic acid bacteria, and removed from unpleasant smells comprises the steps of: sterilizing fat and an emulsifying agent and mixing them together; adding an oil type flavoring to the mixture thereof to obtain a coating solution; sterilizing a protecting agent and mixing it with lactic acid bacteria powder; and high pressure spraying the above mixtures to yogurt.
