GROOVED NOODLE AND PROCESS FOR PRODUCING THE SAME

PROBLEM TO BE SOLVED: To provide noodles remarkably shortening the boiling time thereof from that of non-grooved noodles and by no means inferior in appearance, taste and texture after cooking to the non-grooved noodles.

SOLUTION: The noodles have 1.2-3.0 mm maximum diameter of the cross section of noodle strips and the major outer shape thereof which is a circular arc of a circle or an ellipse. The noodles have a plurality of grooves in the longitudinal direction of the noodle strips and the wall thickness in the cross section of the noodle strips is 0.3-0.8 mm.
