PURPOSE:To provide an acidic protein food free from pasty feeling and having excellent stability of protein. CONSTITUTION:The objective acidic protein food containing animal or vegetable proteins contains water-soluble soybean polysaccharide as exclusive dispersing agent or in combination with a paste selected from high-methoxyl pectin, carboxymethyl cellulose sodium or alginic acid propylene glycol ester. The acidic protein food is e.g. acidic drink, acidic ice cream and acidic dessert. The acidic protein food having the above composition is free from pasty feeling and, nevertheless, resistant to the coagulation, precipitation, phase-separation, etc., of protein particles. |
