<P>PROBLEM TO BE SOLVED: To provide a method for producing dried anchovies preventing deterioration of the dried anchovies and extending a distribution period through separating alien substances and iron filings which are mixed in anchovies using a fan, an inhaler and a magnet selector, soaking anchovies in a chitosan aqueous solution to apply and infiltrate chitosan into anchovies in a process of producing the dried anchovies using thin anchovies of ≤3 cm and small anchovies. <P>SOLUTION: This method for producing the dried anchovies comprises passing small anchovies of ≤3 cm (thin anchovies and small anchovies) through a fan, an inhaler and a magnet selector so as to separate alien substances and iron filings, passing them through a metal detector to select anchovies in which metallic substances remain, applying and infiltrating chitosan into anchovies through soaking anchovies in a chitosan aqueous solution for a prescribed time. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
