PURPOSE:To readily and effectively deodorize an edible oil having an odor as a result of use thereof by bringing the edible oil into contact with chitosan. CONSTITUTION:An edible oil having an odor as a result of use thereof is heated at 60 deg.C or higher, pref. 120 deg.C or higher, and brought into contact with chitosan. The amt. of chitosan to be used is usually in the range of 1wt.%. to about 20wt.% based on the edible oil to secure a deodorizing effect. The time of treatment with chitosan, which is arbitrarily set depending on the desired degree of deodorization, the temp. and mode of treatment, etc., may usually be in the range of tens of seconds to tens of minutes. According to the foregoing procedure, deodorization of the edible oil with chitosan can be readily effected either on a domestic scale or on an industrial scale to enable the edible oil, slightly deteriorated and hence having an odor, to be regenerated. |
