PURPOSE:To obtain the subject dried rice, capable of being rapidly reconstituted with hot water, excellent in loosening properties after drying and good in texture and taste by adding a specific amount of a fatty acid compound to raw rice before heating, cooking the resultant rice, washing the cooked rice with water and drying the washed rice. CONSTITUTION:A fatty acid compound (e.g. glycerol ester of a fatty acid or sucrose ester of the fatty acid) in an amount of 0.2-4.5wt.%, preferably 0.5-2.0wt.% based on raw rice is added to raw rice before heating and the resultant rice is cooked. The obtained cooked rice is then washed with water and subsequently dried to afford the objective dried rice. |
