<P>PROBLEM TO BE SOLVED: To provide a method for crosslinking proteins with a ketose. <P>SOLUTION: The method for crosslinking the proteins is to crosslink the proteins, especially casein, gelatin or collagen obtained from animal tissues, milk or blood with a crosslinking agent which is the ketose containing 3-5 carbon atoms.
