<P>PROBLEM TO BE SOLVED: To provide a method for crosslinking proteins with a ketose. <P>SOLUTION: The method for crosslinking the proteins is to crosslink the proteins, especially casein, gelatin or collagen obtained from animal tissues, milk or blood with a crosslinking agent which is the ketose containing 3-5 carbon atoms. Alternatively, the proteins are obtained from cereals, especially such as corn, wheat or rice. Alternatively, the proteins are obtained from high protein-containing plants, especially green peas, alfalfa, Lupin seed, barley, millet or corn. Alternatively, the proteins are obtained especially from soybean protein such as soybean cake or the like, rape seed or linseed protein such as rape seed cake or the like, or oil-containing plants such as sunflower, peanut, cotton protein or the like.
