PROBLEM TO BE SOLVED: To provide a method and an apparatus for making charcoaled food needing no manual operation of a trained cook, useful for factory-scale production and capable of being continuously operated. SOLUTION: The method for making charcoaled food comprises the steps of spreading charcoal over an air-permeable grate transferring conveyer composed of a heat-resistant material, igniting the charcoal, transferring the grates by the conveyer variable in transferring speed and charcoaling food while concurrently transferring the same by a foodstuff transferring conveyer provided above the grates. The apparatus for making charcoaled food comprises a grate transferring conveyer for horizontally transferring the grates, which conveyer is designed to ignite loaded charcoal at the transfer-starting end thereof and discharge burned-out charcoal at the transfer-terminating end thereof, and between the two ends, a temperature sensor for detecting heating power on the grates and a blower controlled in air volume on the basis of the heating power detected by the temperature sensor, and the foodstuff transferring conveyer provided above the grates for horizontally transferring the foodstuff. |
