PROBLEM TO BE SOLVED: To provide a pizza crust around which both hardening and rubberizing don't take place even when being cooked in a state heated with a microwave oven, and having a bread-like soft feeling in chewing, and to provide a method for producing the same. SOLUTION: The method of this invention is to make the hardness in the outskirts of pizza crust after cooked in a state heated with a microwave oven becomes 1,500 gf or below. It is pref. that the pizza crust is added with a hygrothermally treated starch and an active gluten in the contents of 2-30 wt.% and 5-20 wt.%, respectively, based on the weight of the dough for pizza crust. |
