PROBLEM TO BE SOLVED: To provide a method by which the content of sonotolone, i.e., the content of 3-hydroxy-4,5-dimethyl-2(5H)-furanone which is a spice containing fenugreek can efficiently be increased. SOLUTION: This method is to dry heat a spice containing fenugreek at >=100 deg.C, then subject the heated spice to humidifying treatment and/or wet heat the spice at >=100 deg.C temperature under humidifying conditions and subsequently, as necessary, age the resultant spice to increase the content of sonotolone. At least one step of the dry heating, humidifying treatment, wet heating and aging is conducted in the presence of at least one kind selected from ascorbic acid, its ester and its salt. |
