A method for preparing tteok (rice cake) is provided to improve the storage period by using the modified starch. A method for preparing tteok comprises the steps of (S10) polishing glutinous rice five times; (S20) dipping the polished glutinous rice in the solution containing 0.15 wt% of a grapefruit extract and 0.5 wt% of lactic acid for 12 hours; (S30) pulverizing the soaked glutinous rice; (S40) pulverizing a mixture comprising 66.75-68.85 wt% of the pulverized glutinous rice, 5.99-7.42 wt% of modified starch, 1.00 wt% of refined salt, and 16.38-17.05 wt% of water; (S50) steaming the pulverized mixture for 15 min; (S60) adding 7.78 wt% of refined sugar and punching it for 2 min; and (S70) rapidly cooling the punched mixture to -18 deg.C or less for 2-3 hours to mold it, adding an oxygen scavenger to it, and vacuum packaging it. |
