<P>PROBLEM TO BE SOLVED: To obtain an oil and fat composition which contains a glycerol diacylate recognized as having a suppressing effect on the accumulation of fat in the body, in a high concentration, has a low content of a trans type unsaturated fatty acid considered as having a possibility of causing cardiovascular diseases, and has excellent processing characteristics into bakery products. <P>SOLUTION: This oil and fat composition comprises 60-80 mass% of the glycerol diacylate in its oil and fat. Out of a fatty acid constituting the glycerol diacylate, at least 90 mass% is an unsaturated fatty acid. Out of the residual glycerol triacylate, a tri-saturated glycerol triacylate whose constituent fatty acids are all saturated fatty acids constitutes 45-75 mass%, and the tri-saturated glycerol triacylate whose constituent fatty acids are all unsaturated fatty acids constitutes 10-50 mass%. Out of all fatty acids constituting oil and fat, the content of trans type unsaturated fatty acids is ≤5 mass%. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
